Tastes Like Chicken

The Boy had to work late last night, and I had to get in a 4 mile run to prep for a half marathon I’m doing this weekend. I also had to walk Giada. And feed us both. So I needed something with very little prep work but would be ready when I got off the treadmill.

Ah, chicken. Clean it, season it and throw it in the oven. That easy.

Naturally, I ate this with leftover rice.

In The Boy’s absence, I give you a photo of Giada’s reaction to the chicken.

(I made her work for the chicken. She had her own meal of Natural Choice Lamb and Rice.)

Roasted Chicken

1 lb chicken quarters
1/4 cup olive oil
salt and pepper

Preheat oven to 400 degrees.

Wash chicken. Pat dry. Brush olive oil on the top and bottom of the chicken. Sprinkle with salt and pepper (be generous!).  Place chicken in the oven and bake for 25 minutes. Take out, baste and flip the chicken. Bake for another 25 minutes. After this time, baste and flip the chicken again. Place in oven for another 20-30 minutes, or until meat thermometer reads 170-degrees.
