The Boy is Sick

And from the looks of this picture, I need to clean up our stove!

Not sure what The Boy has but he’s coughing and feeling light headed. Yet he has no problem eating. 🙂 He does prefer to drink tea and eat soup because it makes his throat feel better. Boy, you want soup? No problem!

The Boy’s Reaction: I didn’t get his initial reaction, but when I woke up this morning he told me he went to the kitchen three different times during the night to heat up some soup. He says he’s feeling better. Whew.

Sick Boy Chicken Noodle Soup

8 cups of water (you may need to add more)
2 chicken quarters and 1 drumstick (I just pulled out what I had in the freezer – pull out the equivalent from yours)
1 bay leaf
1 yellow onion, chopped
2 large carrots, chopped
4 stems of celery, chopped
3 cups of cooked egg noodles
salt & pepper, to taste

Boil water in large pot and add chicken. Bring to a boil. At that point, add bay leaf and bring to a low simmer for about an hour (if you have more time, great!), partially covered. Remove chicken from pot. Add onion. In meantime, allow the chicken to cool. Using a fork, pull chicken pieces from bone, leaving some chunks on the bone. Return bones to soup. Let simmer for 30 minutes. Add carrots and celery. When vegetables are soft, add egg noodles (you can even add about a cup of pasta water to help add salt and a bit of starch to the soup). Add salt, pepper and parsley to taste.
